Banana Nut Roll

This is a great cookie. The presentation makes them great for all occasions and they are fun to make, very hands on.

Ingredients:

* 4 cups flour
* 1 cup butter
* 1 teaspoon salt
* 2 teaspoons baking powder
* 1/2 pint sour cream
* 3 packets yeast
* 4 eggs, separated
* 2 teaspoons vanilla
* 1 pound walnuts
* 1 cup sugar
* 3 tablespoons milk
* 1 teaspoon walnut extract, optional
* 1 ripe banana

Method

Mix flour, butter, salt, and baking powder in a large bowl until pea sized balls are formed. In a separate bowl, mix sour cream, yeast, egg yolks, and 1 tsp vanilla. Beat wet ingredients together and add to dry ingredients. Mix until your hands stay clean of dough. Separate dough into 6 balls, wrap with plastic wrap and put in refrigerator overnight. To make nut filling, grind nuts finely, add sugar, milk, 1 teaspoon vanilla, and walnut extract, beat 3 of the remaining egg whites until stiff, and add to nut mixture. Roll out dough in granulated sugar until thin. Spread on nut mixture, and roll. Use the 1 remaining egg whites to brush on rolls. Bake rolls on a greased and floured cookie sheet at 375 degrees for 1/2 hour.
