Ingredients:
* 300g eggplant
* 100g crispy-batter flour
* 20g basil
Seasonings:
* A little white pepper and salt
Directions:
1. Rinse eggplant and cut into slices. Trim basil and rinse.
2. Mix crispy-batter flour with water. Dip eggplant into the paste.
3. Heat oil and deep fry eggplant. Blanch basil in hot oil and garnish on top of eggplant.
