Oven Baked Sausage Omelet

Delicious Sausage Omelet With Two Cheeses
Easy Sausage Omelet Recipe
A Great Brunch Item


Preparation time: 10 minutes. Serves 6.

Ingredients:
1 1/2 teaspoons each of vegetable oil and butter
1/2 cup diced onion
1 1/2 cups cooked, scrambled sausage
8 beaten eggs
1/3 cup milk
1/2 cup grated cheddar cheese, divided
1/2 cup grated Mozzarella cheese, divided
Tabasco sauce (optional)

Instructions:
Preheat your oven to 400 degrees F and grease a 9 X 9 inch square pan
Heat oil and butter in a skillet over moderate heat
While the pan is heating, beat the eggs with the milk in a large mixing bowl until well blended but not frothy (option - add a few drops of Tabasco or a pinch of cayenne to the eggs while blending them for a little "zip" if you like that like I do)
Add onions to the heated skillet and saute' a few minutes or until softened
Add sausage and remove from the heat
Stir the sausage mixture and 1/4 cup each of the cheddar and Mozzarella cheese into the egg mixture
Salt and pepper to taste
Pour into the pan and sprinkle the remaining cheese over the top
Place in preheated oven for 20-30 minutes or until the top is lightly browned
Remove from the oven and serve
